Description

Crispy on the outside, fluffy inside — these golden potato bites are coated in garlic butter, herbs, and parmesan, served with a creamy, spicy aioli that makes every bite addictive. Perfect as a side, snack, or party appetizer!


Ingredients

  • 1 ½ lb (700 g) baby potatoes
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • ¼ cup grated parmesan cheese
  • 1 tbsp chopped fresh parsley (plus extra for garnish)
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 ½ tsp sriracha or chili sauce (adjust to taste)
  • ¼ tsp smoked paprika

Instructions

  1. Wash and scrub the baby potatoes.
  2. Boil them in salted water for 12–15 minutes, until fork-tender but not falling apart.
  3. Drain and let cool slightly.
  4. Gently press each potato with the bottom of a glass or fork until slightly flattened.
  5. Place on a parchment-lined baking tray.
  6. Drizzle with olive oil and melted butter.
  7. Sprinkle garlic, paprika, salt, and pepper evenly.
  8. Toss lightly to coat all sides.
  9. Preheat the oven to 220°C (425°F).
  10. Bake for 25–30 minutes, flipping halfway, until golden and crisp.
  11. Immediately sprinkle parmesan and chopped parsley over the hot potatoes.
  12. In a small bowl, combine mayonnaise, lemon juice, garlic powder, sriracha, and smoked paprika.
  13. Mix until smooth. Adjust spice level to your liking.
  14. Chill until ready to serve.
  15. Arrange crispy potatoes on a platter, sprinkle with extra parmesan and parsley, and serve warm with the spicy aioli for dipping.
