Crispy on the outside, fluffy inside — these golden potato bites are coated in garlic butter, herbs, and parmesan, served with a creamy, spicy aioli that makes every bite addictive. Perfect as a side, snack, or party appetizer!

- 1 ½ lb (700 g) baby potatoes
- 2 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- ¼ cup grated parmesan cheese
- 1 tbsp chopped fresh parsley (plus extra for garnish)
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 ½ tsp sriracha or chili sauce (adjust to taste)
- ¼ tsp smoked paprika
Instructions
- Wash and scrub the baby potatoes.
- Boil them in salted water for 12–15 minutes, until fork-tender but not falling apart.
- Drain and let cool slightly.
- Gently press each potato with the bottom of a glass or fork until slightly flattened.
- Place on a parchment-lined baking tray.
- Drizzle with olive oil and melted butter.
- Sprinkle garlic, paprika, salt, and pepper evenly.
- Toss lightly to coat all sides.
- Preheat the oven to 220°C (425°F).
- Bake for 25–30 minutes, flipping halfway, until golden and crisp.
- Immediately sprinkle parmesan and chopped parsley over the hot potatoes.
- In a small bowl, combine mayonnaise, lemon juice, garlic powder, sriracha, and smoked paprika.
- Mix until smooth. Adjust spice level to your liking.
- Chill until ready to serve.
- Arrange crispy potatoes on a platter, sprinkle with extra parmesan and parsley, and serve warm with the spicy aioli for dipping.
