Description

Crispy Lime-Chili Cheese Bombs are a delicious snack featuring gooey mozzarella cheese coated in a crispy panko crust, drizzled with a zesty lime-chili sauce.


Ingredients

  • 12 oz (350 g) mozzarella cheese (cut into 1.5 inch cubes)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 ½ cups panko breadcrumbs
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • Zest of 1 lime
  • Oil for deep frying
  • 3 tbsp honey (for lime-chili drizzle)
  • 1 tbsp lime juice (for lime-chili drizzle)
  • ½ tsp chili flakes (for lime-chili drizzle)
  • ½ tsp lime zest (for lime-chili drizzle)
  • Chili pearls (optional garnish)
  • Fresh herbs (chopped cilantro or parsley)

Instructions

  1. Prep the cheese: Cut mozzarella into cubes and place in the freezer for 10 minutes so they hold shape during frying.
  2. Prepare the coating: Place flour in one bowl, beat eggs in a second bowl, and mix panko, chili powder, paprika, garlic powder, lime zest, and salt in a third bowl.
  3. Bread the cheese cubes: Coat each cheese cube in flour, dip into egg, and roll in the panko mixture. For MAX crispiness, repeat the egg and panko step once more.
  4. Fry: Heat oil to 350°F (175°C) and fry cheese bombs for 1–2 minutes, until golden brown. Remove and drain on paper towels, then sprinkle with a little extra lime zest.
  5. Make the lime-chili drizzle: Mix honey, lime juice, lime zest, and chili flakes, then drizzle lightly over the cheese bombs.
  6. Serve: Plate the cheese bombs and finish with chili pearls or chili oil dots, fresh cilantro or parsley, and lime wedges on the side. Serve immediately while molten and stretchy!

Notes

  • For a spicier version, increase the amount of chili flakes in the drizzle.
