- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 2 tsp vanilla extract
- 1 can cherry pie filling
- Candy eyeballs (store-bought or homemade with fondant/icing)
Instructions
- Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract. Pour filling over cooled crust.
- Place the pan in a water bath (to avoid cracks) and bake for 50–60 minutes, or until the center is just set. Turn off the oven, crack the door, and let cheesecake cool slowly for 1 hour. Chill at least 4 hours or overnight.
- Spoon cherry pie filling over the top, letting it drip slightly over the sides for a “bloody” effect. Press candy eyeballs randomly into the cherries to create the creepy look.
- Slice and serve chilled for the ultimate Halloween dessert.

- For a more intense cherry flavor, consider adding a splash of cherry liqueur to the filling.
