- 1 ½ lbs chicken breast or thighs, cut into bite-sized chunks
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- ½ tsp black pepper
- 1 tsp salt
- 12 oz spaghetti (cooked al dente)
- 8 oz Velveeta cheese, cubed
- 1 cup chicken broth
- ½ cup heavy cream
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups whole milk (warm)
- 1 ½ cups shredded mozzarella cheese
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped (plus extra for garnish)
Instructions
- In a bowl, toss chicken pieces with olive oil and seasonings (paprika, garlic powder, onion powder, oregano, salt, and pepper). Heat a skillet over medium-high and cook chicken until golden brown and cooked through (6–8 minutes). Remove and set aside.
- Cook spaghetti according to package directions until al dente. Drain. In a saucepan, combine Velveeta cubes, chicken broth, and heavy cream. Stir over medium heat until smooth and creamy. Toss cooked spaghetti into this cheesy sauce until well coated. Spread in a baking dish or skillet.
- In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant (1 minute). Stir in flour to make a roux. Cook for 1–2 minutes. Gradually whisk in warm milk until smooth and slightly thickened. Stir in mozzarella cheese until melted. Season with salt, pepper, and parsley.
- Pour mozzarella garlic cheese sauce evenly over the Velveeta spaghetti base. Arrange seared chicken chunks on top. Optional: Broil for 2–3 minutes to lightly brown the cheese topping.
- Garnish with extra parsley. Serve hot with garlic bread or a side salad.
Notes
- For a spicier kick, add red pepper flakes to the chicken seasoning.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
