Ingredients

  • ½ cup (100 g) granulated sugar
  • 3 tbsp cornstarch
  • 3 egg yolks
  • 2 tsp vanilla extract
  • 1 tbsp butter
  • (or substitute with 2 cups prepared instant vanilla pudding mix for a shortcut)
  • 1 ½ cups (150 g) crushed digestive biscuits or graham crackers
  • 4 tbsp (60 g) melted butter
  • 2 tbsp brown sugar

Instructions

  1. In a bowl, combine crushed cookies, melted butter, and brown sugar. Mix until the texture resembles wet sand. Set aside or lightly toast in the oven at 180°C (350°F) for 5 minutes for extra crunch (optional).
  2. In a saucepan, whisk together sugar and cornstarch. Add milk gradually while whisking to avoid lumps. Whisk in egg yolks and cook over medium heat until thickened (about 6–8 minutes). Remove from heat and stir in butter and vanilla extract. Cover with plastic wrap directly on the surface to prevent a skin from forming. Let cool slightly.
  3. In serving bowls or a large dish, layer crumble, then vanilla pudding, repeating until full. Finish with a layer of crumble on top. Chill in the refrigerator for at least 1 hour before serving.
  4. Serve chilled with a sprinkle of extra crumble or a dollop of whipped cream on top. Optional: drizzle with caramel sauce or melted chocolate for extra indulgence.
