Description

A delicious and creamy garlic herb chicken penne recipe that is perfect for a comforting meal.


Ingredients

  • 2 large chicken breasts (sliced or cut into cutlets)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • Salt & black pepper
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 12 oz (350 g) penne pasta
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups (480 ml) milk
  • 1 cup (240 ml) heavy cream
  • 1 cup grated parmesan
  • ¼ cup chopped fresh parsley
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt & pepper to taste
  • ½ cup reserved pasta water (if needed)

Instructions

  1. Bring salted water to a boil and cook penne until al dente (about 10 minutes). Reserve ½ cup pasta water, drain, and set aside.
  2. Season chicken with garlic powder, onion powder, paprika, thyme, oregano, salt, and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Transfer to a plate and slice.
  3. In the same pan, melt 3 tbsp butter. Add minced garlic and cook for 30 seconds. Add flour and whisk to form a roux (30 seconds). Slowly pour in the milk, whisking continuously. Add heavy cream and let it gently simmer. Stir in parmesan, parsley, basil, oregano, salt, and pepper. Let the sauce thicken, adding a splash of pasta water if it gets too thick.
  4. Add cooked penne to the creamy sauce and toss well. Place sliced golden chicken on top and sprinkle with extra parsley and parmesan.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • Feel free to substitute chicken with shrimp or vegetables for a different variation.
  • This dish can be made ahead of time and reheated before serving.
