- 12 oz bowtie pasta (farfalle)
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp Cajun seasoning (divided)
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- ½ cup Parmesan cheese, grated
- 2 tbsp cream cheese (optional, for extra creaminess)
- 2 tbsp fresh parsley, chopped (for garnish)
- Salt & pepper to taste
Instructions
- Boil bowtie pasta in salted water until al dente. Drain and set aside.
- Toss chicken with 1 tbsp Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and diced bell pepper until fragrant. Add heavy cream, chicken broth, and remaining Cajun seasoning. Stir and simmer until slightly thickened. Add mozzarella, Parmesan, and cream cheese (if using). Stir until smooth and creamy.
- Add cooked pasta and chicken into the sauce. Toss well to coat. Let simmer for 2–3 minutes so flavors meld together.
- Garnish with fresh parsley. Serve hot with garlic bread or a crisp green salad.
Notes
- For a spicier dish, add more Cajun seasoning.
- Feel free to substitute chicken with shrimp or sausage.
- This dish can be made ahead and reheated, but the pasta may absorb some sauce.
