Description

A rich and creamy bread pudding made with brioche or challah bread, topped with a luscious vanilla custard sauce.


Ingredients

  • 8 cups brioche or challah bread, cut into cubes (day-old works best)
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)
  • ¼ tsp nutmeg (optional)
  • 2 tbsp unsalted butter, melted
  • 2 cups whole milk (for custard sauce)
  • ½ cup heavy cream (for custard sauce)
  • ½ cup granulated sugar (for custard sauce)
  • 4 large egg yolks (for custard sauce)
  • 2 tbsp cornstarch (for custard sauce)
  • 2 tsp vanilla extract (for custard sauce)
  • Powdered sugar, for dusting
  • Fresh pomegranate seeds or berries, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. Place cubed bread into the prepared dish. Drizzle with melted butter.
  3. In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and nutmeg until smooth.
  4. Pour custard mixture evenly over bread cubes, pressing down lightly so all pieces soak up liquid. Let sit for 15 minutes.
  5. Bake uncovered for 40–45 minutes, or until golden on top and custard is set (center should be slightly soft).
  6. In a saucepan, heat milk and cream over medium heat until steaming (do not boil).
  7. In a bowl, whisk together sugar, egg yolks, and cornstarch until pale and smooth.
  8. Slowly pour hot milk mixture into yolks while whisking constantly.
  9. Return mixture to saucepan and cook on low heat, whisking until thickened enough to coat the back of a spoon.
  10. Remove from heat and stir in vanilla extract.

Notes

  • Day-old bread works best for soaking up the custard.
  • Feel free to add raisins or chocolate chips for extra flavor.
  • Serve warm with vanilla custard sauce and garnish with fresh fruit.
