Description
A rich and creamy bread pudding made with brioche or challah bread, topped with a luscious vanilla custard sauce.

- 8 cups brioche or challah bread, cut into cubes (day-old works best)
- 4 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- 2 tsp vanilla extract
- ½ tsp ground cinnamon (optional)
- ¼ tsp nutmeg (optional)
- 2 tbsp unsalted butter, melted
- 2 cups whole milk (for custard sauce)
- ½ cup heavy cream (for custard sauce)
- ½ cup granulated sugar (for custard sauce)
- 4 large egg yolks (for custard sauce)
- 2 tbsp cornstarch (for custard sauce)
- 2 tsp vanilla extract (for custard sauce)
- Powdered sugar, for dusting
- Fresh pomegranate seeds or berries, for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- Place cubed bread into the prepared dish. Drizzle with melted butter.
- In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and nutmeg until smooth.
- Pour custard mixture evenly over bread cubes, pressing down lightly so all pieces soak up liquid. Let sit for 15 minutes.
- Bake uncovered for 40–45 minutes, or until golden on top and custard is set (center should be slightly soft).
- In a saucepan, heat milk and cream over medium heat until steaming (do not boil).
- In a bowl, whisk together sugar, egg yolks, and cornstarch until pale and smooth.
- Slowly pour hot milk mixture into yolks while whisking constantly.
- Return mixture to saucepan and cook on low heat, whisking until thickened enough to coat the back of a spoon.
- Remove from heat and stir in vanilla extract.
Notes
- Day-old bread works best for soaking up the custard.
- Feel free to add raisins or chocolate chips for extra flavor.
- Serve warm with vanilla custard sauce and garnish with fresh fruit.
