Cranberry Pecan Baked Brie en Croûte is a delicious and elegant appetizer featuring creamy Brie cheese wrapped in flaky puff pastry, topped with a sweet and tangy cranberry pecan filling.

- 1 round Brie cheese (200–250 g)
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1/2 cup (60 g) dried cranberries, chopped
- 1/3 cup (40 g) pecans, toasted & chopped
- 2 tbsp honey or maple syrup
- 1 tbsp brown sugar (optional for extra sweetness)
- 1 tbsp butter, melted
- 1/4 tsp cinnamon
- 1–2 tsp fresh thyme leaves (optional but delicious)
- Extra pecans (for garnish)
- Fresh cranberries (for garnish)

- Additional honey drizzle (for garnish)
Instructions
- In a small bowl, mix chopped cranberries, pecans, honey, melted butter, cinnamon, and thyme until everything is glossy and coated.
- Remove any packaging from the Brie but keep the rind on. Optionally, slice off just the top rind for a more dramatic cheese melt.
- Lay the puff pastry sheet on a lightly floured surface, place the brie in the center, and spoon the cranberry pecan mixture on top. Bring the pastry edges up and over the cheese, folding neatly, and trim excess pastry while ensuring full coverage. Press to seal and flip seam-side down on a baking sheet. Brush generously with egg wash.
- Preheat oven to 200°C / 400°F and bake for 20–25 minutes until the pastry is deep golden brown. Let rest for 3–5 minutes.
- Serve warm with crackers, sliced baguette, apple slices, fresh thyme, extra honey drizzle, and toasted pecans.
Notes
- For a more intense flavor, consider adding a pinch of nutmeg to the filling.
- Ensure the puff pastry is fully thawed before use for best results.
