  • 1/2 cup chocolate chips (or chopped nuts, if preferred)

Instructions

  1. Start by thoroughly draining the cottage cheese to remove excess moisture. You can place it in a fine mesh sieve for about 10 minutes to let the liquid drip out.
  2. In a large mixing bowl, add the drained cottage cheese, almond flour, rolled oats, natural sweetener, nut butter, and vanilla extract.
  3. Using a spatula or wooden spoon, mix all the ingredients together until they are well combined. The mixture will look thick and slightly chunky due to the cottage cheese and oats.
  4. Sprinkle the baking soda and salt into the mixture, and stir until evenly incorporated.
  5. Gently fold in the chocolate chips or nuts until they are evenly distributed throughout the dough.
