- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (or chopped nuts, if preferred)
Instructions
- Start by thoroughly draining the cottage cheese to remove excess moisture. You can place it in a fine mesh sieve for about 10 minutes to let the liquid drip out.
- In a large mixing bowl, add the drained cottage cheese, almond flour, rolled oats, natural sweetener, nut butter, and vanilla extract.
- Using a spatula or wooden spoon, mix all the ingredients together until they are well combined. The mixture will look thick and slightly chunky due to the cottage cheese and oats.
- Sprinkle the baking soda and salt into the mixture, and stir until evenly incorporated.
- Gently fold in the chocolate chips or nuts until they are evenly distributed throughout the dough.
- Taste the dough to see if any additional sweetener is necessary. Adjust to your liking.
- Once mixed, cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This will help the flavors meld together and improve the texture.
- After chilling, scoop the cookie dough into small portions using a cookie scoop or your hands and place them on a serving plate or in an airtight container.
- Serve as is, or keep in the refrigerator for up to one week.
