Description

Delicious and colorful Cosmic Rainbow M&M Cupcakes that bring fun and joy to any occasion.


Ingredients

  • 1 cup (130 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 6 tbsp (30 g) cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (120 ml) vegetable oil
  • ½ cup (120 ml) buttermilk (or ½ cup milk + 1 tsp vinegar, rested 5 min)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 ml) hot water
  • 1 cup (226 g) unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Gel food coloring (red, blue, yellow, green, purple, etc.)
  • Mini M&Ms or regular M&Ms for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add oil, buttermilk, eggs, and vanilla. Mix until smooth. Stir in hot water (batter will be thin).
  4. Divide batter evenly into cupcake liners, filling about ⅔ full.
  5. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
  6. Beat butter until creamy. Add powdered sugar gradually, alternating with cream, until fluffy. Stir in vanilla.
  7. Divide frosting into 5–6 bowls and tint each with different gel colors. Transfer colors side by side into a large piping bag fitted with a star tip.
  8. Pipe swirls of rainbow frosting on each cupcake. Top with M&Ms for a cosmic, colorful look.

  • Ensure the cupcakes are completely cool before frosting to prevent melting.
  • Feel free to use any colors of gel food coloring to match your theme.
