Ingredients

  • 1 cup Coca-Cola (not diet)

  • 1 tsp vanilla extract
  • 1 ½ cups heavy whipping cream
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup butter
  • ¼ cup unsweetened cocoa powder
  • 6 tbsp Coca-Cola
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Whipped cream
  • Crushed peppermint, cherries, or chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a saucepan, bring Coca-Cola, butter, and cocoa powder to a boil. Remove from heat.
  3. In a mixing bowl, whisk flour and sugar. Pour hot Coke mixture over and mix.
  4. Stir in buttermilk, eggs, baking soda, and vanilla until smooth.
  5. Divide into pans and bake for 25–30 minutes. Cool completely.
  6. Beat cream cheese until smooth. Add powdered sugar and vanilla.
  7. Whip heavy cream to stiff peaks, then fold into cream cheese mixture. Chill.
  8. Place one cake layer on a plate, spread with creamy filling.
  9. Add another cake layer, more filling, then the final cake layer.
  10. In a saucepan, melt butter with cocoa and Coca-Cola.
  11. Remove from heat, whisk in powdered sugar and vanilla until smooth and glossy.
  12. Pour glaze over the layered cake, letting it drip down the sides.
  13. Top with whipped cream and garnish with crushed peppermint, cherries, or chocolate curls.
