Classic Brazilian Brigadeiros are a delightful sweet treat made from condensed milk, cocoa powder, and chocolate, rolled in chocolate sprinkles.

- 2 cans (14 oz each / 395 g) sweetened condensed milk
- 4 tablespoons unsweetened cocoa powder (sifted to avoid lumps)
- 4 tablespoons unsalted butter (divided: 2 tbsp for cooking, 2 tbsp for rolling/greasing hands)
- 150 g (5 oz) good-quality milk chocolate or semi-sweet chocolate (for filling, optional but recommended for lava effect)
- Pinch of salt
- Chocolate sprinkles (for coating)
Instructions
- In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk, cocoa powder, 2 tablespoons butter, and salt.
- Stir continuously with a silicone spatula or wooden spoon.
- Cook for 10–12 minutes until the mixture thickens and pulls away from the bottom of the pan when stirred (soft fudge consistency).
- Transfer the mixture to a buttered plate or bowl.
- Let cool completely to room temperature. (You can refrigerate for 20–30 minutes to speed it up.)
- Lightly grease your hands with butter.
- Take a small spoonful of cooled mixture, flatten it in your palm, and place a small piece of chocolate in the center.
- Roll into a smooth ball, encasing the chocolate.
- Roll each ball in chocolate sprinkles to coat.
- Place each brigadeiro into a mini paper liner.

- For a richer flavor, use high-quality chocolate for the filling.
