Ingredients
Scale
- 1½ cups (190 g) all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup (115 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120 ml) sour cream or plain yogurt
- 2 medium apples (peeled, cored, and diced) — use Granny Smith or Honeycrisp
- 2 tbsp butter
- ¼ cup (50 g) brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp lemon juice
- 1 tbsp flour (to thicken)
- ½ cup (65 g) all-purpose flour (for crumble)
- ¼ cup (50 g) brown sugar (for crumble)
- ½ tsp cinnamon (for crumble)
- 4 tbsp (60 g) cold butter, cubed (for crumble)
- Warm caramel sauce (optional for drizzling)
Instructions
- In a skillet, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–6 minutes until apples are softened and caramelized. Sprinkle in 1 tbsp flour and stir until slightly thickened. Set aside to cool slightly.
- Preheat oven to 175°C (350°F). Grease and line an 8×8-inch (20×20 cm) pan. In a bowl, whisk together flour, baking powder, and salt. In another large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla extract. Add the dry ingredients alternately with sour cream, mixing until just combined.
- In a small bowl, combine flour, brown sugar, and cinnamon for the crumble. Cut in cold butter using a fork until crumbly and coarse.
- Spread half the cake batter into the prepared pan. Spoon the apple filling evenly over the top. Spread the remaining batter gently over the apples. Sprinkle with the crumble topping.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 10–15 minutes before slicing.
- Drizzle with warm caramel sauce before serving. Enjoy slightly warm or at room temperature.
