- 200 g (7 oz) good-quality dark or milk chocolate (chopped or chips)
- 1 tsp coconut oil (optional, for smoother chocolate)
Instructions
- Melt the Chocolate: Place chocolate and coconut oil in a heatproof bowl. Melt using a double boiler (over simmering water) or microwave in 20-second bursts, stirring until smooth.
- Prepare the Clusters: Line a muffin tin with mini cupcake liners (or use a parchment-lined tray). Spoon a little melted chocolate into the bottom of each liner. Add a spoonful of pomegranate arils on top. Cover with more melted chocolate, ensuring the arils are coated but still peeking through.
- Chill: Place tray in the refrigerator for 30–40 minutes until chocolate is fully set.
- Serve: Remove from liners and enjoy as bite-sized, juicy-crunchy chocolate treats!
