Description

A delicious and moist zucchini chocolate loaf that is perfect for breakfast or as a snack.


Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup packed light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups coarsely grated zucchini (lightly packed, about 1 large)
  • 1/2 cup semi sweet chocolate chips (plus more for topping)

Instructions

  1. Preheat oven to 350°F and grease the bottom and sides of a standard loaf pan with cooking spray. Line the bottom with parchment paper.
  2. Add the flour, cocoa powder, baking soda, baking powder and salt into a medium bowl and whisk to combine.
  3. In a separate large bowl, combine the eggs, both sugars, sour cream, oil, and vanilla.
  4. Whisk for about a minute, or until the mixture is smooth and well combined.
  5. Add the flour mixture and gently fold with a spatula until mostly combined.
  6. Add the grated zucchini and chocolate chips. Mix until incorporated.
  7. Transfer the batter into the prepared loaf pan, spread evenly and sprinkle more chocolate chips on top.
  8. Bake for 45 to 55 minutes or until a toothpick inserted in the middle comes out clean.
  9. Place the pan on a wire rack to cool completely before slicing.

Notes

  • Ensure the zucchini is well grated and packed lightly for best results.
  • You can add nuts for extra crunch if desired.
