Description
A delicious and moist zucchini chocolate loaf that is perfect for breakfast or as a snack.
Ingredients

- 1 1/2 cups all purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup packed light brown sugar
- 1/2 cup white sugar
- 1/2 cup sour cream
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups coarsely grated zucchini (lightly packed, about 1 large)
- 1/2 cup semi sweet chocolate chips (plus more for topping)
Instructions
- Preheat oven to 350°F and grease the bottom and sides of a standard loaf pan with cooking spray. Line the bottom with parchment paper.
- Add the flour, cocoa powder, baking soda, baking powder and salt into a medium bowl and whisk to combine.
- In a separate large bowl, combine the eggs, both sugars, sour cream, oil, and vanilla.
- Whisk for about a minute, or until the mixture is smooth and well combined.
- Add the flour mixture and gently fold with a spatula until mostly combined.
- Add the grated zucchini and chocolate chips. Mix until incorporated.
- Transfer the batter into the prepared loaf pan, spread evenly and sprinkle more chocolate chips on top.
- Bake for 45 to 55 minutes or until a toothpick inserted in the middle comes out clean.
- Place the pan on a wire rack to cool completely before slicing.
Notes
- Ensure the zucchini is well grated and packed lightly for best results.
- You can add nuts for extra crunch if desired.
