- 1 (16 oz / 450g) tube refrigerated chocolate chip cookie dough
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) light brown sugar
- ½ cup (100g) granulated sugar
- ¼ cup (60ml) milk or heavy cream
- 2 tsp vanilla extract
- 2 ½ cups (300g) all-purpose flour — heat-treated
- ½ tsp salt
- 1 ½ cups mini chocolate chips
- 2 cups (480ml) heavy whipping cream, very cold
- ½ cup (60g) powdered sugar
- 1 tsp vanilla extract
- 1 cup (180g) chocolate chips
- ½ cup (120ml) warm heavy cream
- More mini chocolate chips (for topping)
- Cookie dough balls (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Press cookie dough into the bottom of a 9-inch springform pan. Bake 12–16 minutes, until lightly golden. Cool completely.
- Beat butter, brown sugar, and granulated sugar until creamy. Add milk and vanilla, then beat well. Mix in heat-treated flour and salt until smooth. Fold in mini chocolate chips. Spread evenly over cooled cookie crust. Chill for 20–30 minutes to firm up.
- Beat heavy cream, powdered sugar, and vanilla until thick peaks form. Spread over the cookie dough layer. Chill again while making ganache.
- Pour warm cream over chocolate chips and let rest for 1 minute. Stir until silky. Let cool for 5–7 minutes, then spoon around the edge to let it drip. Spread a thin layer on top if desired.
- Pipe whipped cream swirls along the edges, add cookie dough balls, and sprinkle mini chocolate chips. Chill for at least 1 hour before slicing.
Notes
- Heat treat your flour by spreading it on a baking sheet and baking at 300°F (150°C) for 5 minutes to kill bacteria.
- Ensure the heavy cream is very cold for the whipped cream layer.
- Chill the cake for at least 1 hour before serving for best results.
