Description

A delicious and easy-to-make Chocolate Blackberry Swiss Roll filled with creamy blackberry filling and topped with a rich chocolate glaze.


Ingredients

  • For the Chocolate Sponge Cake
    • Eggs: 4 large
    • Granulated sugar: 1/2 cup (100g)
    • All-purpose flour: 1/2 cup (60g)
    • Unsweetened cocoa powder: 1/4 cup (25g)
    • Baking powder: 1/2 tsp
    • Salt: Pinch
    • Vanilla extract: 1 tsp
  • For the Blackberry Cream Filling
    • Heavy whipping cream (cold): 1 cup (240 ml)
    • Cream cheese (softened): 115g (4 oz)
    • Powdered sugar: 1/2 cup (60g)
    • Vanilla extract: 1 tsp
    • Blackberry jam or puree: 1/3 cup
  • For the Chocolate Glaze
    • Dark chocolate: 120g
    • Butter: 2 tbsp
    • Heavy cream: 3 tbsp
  • Decoration
    • Fresh blackberries
    • Mint leaves (optional)

Instructions

  1. Preheat oven to 180°C / 350°F and line a 10×15 inch (25×38 cm) baking tray with parchment paper.
  2. In a bowl, beat eggs and sugar for 5–6 minutes until pale, thick, and doubled. Sift in flour, cocoa powder, baking powder, and salt. Fold gently with a spatula and stir in vanilla. Spread batter evenly in the tray and bake for 10–12 minutes.
  3. Place a clean kitchen towel on the counter and dust lightly with powdered sugar. Flip the hot cake onto the towel, peel off parchment, and gently roll the cake with the towel into a log. Let it cool completely.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth. Add heavy cream and whip until fluffy. Fold in blackberry jam/purée.
  5. Unroll the cooled cake, spread the blackberry cream evenly, and re-roll gently without the towel. Wrap in plastic and refrigerate for 30–60 min to set.
  6. Melt chocolate, butter, and cream together until glossy and smooth. Pour over the chilled roll.
  7. Add fresh blackberries along the top and a mint sprig for color (optional). Slice and serve.

  • Ensure the cake is completely cool before adding the filling to prevent it from melting.
  • Use a serrated knife to slice the roll for clean cuts.
