Ingredients
2 cups cooked chicken, shredded or diced
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
1 packet ranch seasoning mix
2 cups shredded cheddar cheese, divided
1 (32 oz) bag frozen tater tots
6 slices cooked bacon, crumbled
2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
In a large bowl, mix chicken, cream of chicken soup, sour cream, ranch seasoning, 1 cup cheddar cheese, and half the bacon until well combined.
Spread the chicken mixture evenly into the prepared baking dish.
Arrange frozen tater tots in a single layer over the top.
Bake uncovered for 35–40 minutes, until tater tots are golden and crispy.
Sprinkle with remaining cheddar cheese and bacon, then bake 5–7 minutes more, until cheese is melted.
Garnish with parsley if desired and serve hot.
Notes
For extra flavor, swap cheddar with pepper jack or a cheese blend.
Add veggies like frozen corn, peas, or broccoli for more texture and color.
Make ahead by assembling the casserole, covering, and refrigerating up to 24 hours before baking.
Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
