Description

Cherry Coke Ice Cream is a delightful summer treat that combines the classic flavors of Cherry Coke with creamy ice cream, perfect for cooling off on a hot day.


Ingredients

Scale
  • 1 ½ cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 cup Cherry Coke (or regular Coke + 2 tbsp cherry syrup)
  • 1 cup cherries (fresh, frozen, or maraschino, chopped)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Make the Base: In a saucepan, combine sugar, milk, and half the cream. Warm over medium heat until sugar dissolves (do not boil). Remove from heat, stir in remaining cream, Cherry Coke, vanilla, and salt. Chill mixture in the fridge for at least 2–3 hours (or overnight).
  2. Churn the Ice Cream: Pour chilled mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20–25 minutes). In the last 5 minutes, add chopped cherries so they fold into the ice cream.
  3. Freeze & Serve: Transfer ice cream to a container, cover, and freeze at least 4 hours until firm. Scoop into cups or cones, top with extra cherries (and maybe a drizzle of chocolate syrup for a sundae vibe).

Notes

  • For a richer flavor, use full-fat milk instead of whole milk.
  • Feel free to experiment with different types of cherries based on availability.
  • This recipe can be made without an ice cream maker by stirring the mixture every 30 minutes while freezing.
