  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) heavy whipping cream, cold
  • 1 tbsp lemon juice (optional, for brightness)
  • 1 can (21 oz / 600 g) cherry pie filling (or homemade cherry compote)
  • 1 cup (240 ml) heavy cream
  • 2 tbsp powdered sugar
  • Toasted coconut flakes or white chocolate curls (for garnish)

Instructions

  1. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch (23 cm) springform pan or pie dish. Chill in the refrigerator for 15–20 minutes to set while preparing the filling.
  2. In a large mixing bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. Add vanilla extract and lemon juice; mix well. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy. Spread the filling evenly over the chilled crust.
  3. Spoon cherry pie filling evenly over the cream layer. Use a spatula to smooth it out gently, ensuring even coverage.
  4. Whip 1 cup heavy cream with powdered sugar until fluffy. Pipe or spread over the cherry layer. Garnish with toasted coconut flakes or white chocolate curls for a delicate finish.
  5. Refrigerate the pie for at least 4 hours (or overnight) before serving to allow it to fully set. Slice with a warm knife for clean layers.
