Description

A delightful Cherry Cheesecake Trifle featuring layers of creamy cheesecake, cherry filling, and a crunchy graham cracker crust.


Ingredients

  • 2 cups (200 g) graham cracker crumbs (or digestive biscuits, crushed)
  • ½ cup (115 g) unsalted butter, melted
  • 2 tbsp sugar
  • 450 g (16 oz) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 2 cups (480 ml) heavy cream, whipped to stiff peaks
  • 1 tsp vanilla extract
  • 2 ½ cups cherry pie filling (or homemade cherry compote)
  • Extra whipped cream for garnish
  • Fresh cherries for garnish
  • Graham cracker crumbs for garnish

Instructions

  1. Prepare the crust base: Mix graham cracker crumbs with melted butter and sugar.
  2. Press gently into the bottom of a trifle dish or serving glasses.
  3. Make the cheesecake cream: Beat cream cheese with powdered sugar until smooth.
  4. Fold in vanilla and whipped cream until light and fluffy.
  5. Assemble the trifle: Layer as follows: graham cracker base, cheesecake cream, cherry filling. Repeat until bowl is full.
  6. Top & garnish: Pipe or dollop whipped cream on top. Garnish with fresh cherries and a sprinkle of graham crumbs.
  7. Chill & serve: Refrigerate at least 2 hours before serving to let flavors meld.

Notes

  • For a homemade cherry compote, simmer fresh or frozen cherries with sugar and a splash of lemon juice until thickened.
  • Can be made a day in advance for better flavor.
  • Use low-fat cream cheese for a lighter version.
