A delightful Cherry Cheesecake Trifle featuring layers of creamy cheesecake, cherry filling, and a crunchy graham cracker crust.
Ingredients

- 2 cups (200 g) graham cracker crumbs (or digestive biscuits, crushed)
- ½ cup (115 g) unsalted butter, melted
- 2 tbsp sugar
- 450 g (16 oz) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 2 cups (480 ml) heavy cream, whipped to stiff peaks
- 1 tsp vanilla extract
- 2 ½ cups cherry pie filling (or homemade cherry compote)
- Extra whipped cream for garnish
- Fresh cherries for garnish
- Graham cracker crumbs for garnish
Instructions
- Prepare the crust base: Mix graham cracker crumbs with melted butter and sugar.
- Press gently into the bottom of a trifle dish or serving glasses.
- Make the cheesecake cream: Beat cream cheese with powdered sugar until smooth.
- Fold in vanilla and whipped cream until light and fluffy.
- Assemble the trifle: Layer as follows: graham cracker base, cheesecake cream, cherry filling. Repeat until bowl is full.
- Top & garnish: Pipe or dollop whipped cream on top. Garnish with fresh cherries and a sprinkle of graham crumbs.
- Chill & serve: Refrigerate at least 2 hours before serving to let flavors meld.
Notes
- For a homemade cherry compote, simmer fresh or frozen cherries with sugar and a splash of lemon juice until thickened.
- Can be made a day in advance for better flavor.
- Use low-fat cream cheese for a lighter version.
