- 2 medium yellow squash (grated, excess moisture squeezed out)
- 1 small onion, finely grated
- 1 cup shredded cheddar cheese
- ½ cup parmesan cheese, grated
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs
- 2 tbsp fresh parsley or dill, chopped
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- Olive oil (for pan-frying or baking spray if baking)
- 1 cup Greek yogurt (for the dip)
- 1 tbsp lemon juice (for the dip)
- 1 tsp lemon zest (for the dip)
- 1 tbsp fresh dill, finely chopped (for the dip)
- 1 garlic clove, minced (or ½ tsp garlic powder for the dip)
- Salt & pepper, to taste (for the dip)
Instructions
- Grate squash and onion, then place in a clean towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial to ensure crispy tots.
- In a large bowl, combine grated squash, onion, cheeses, breadcrumbs, eggs, herbs, and seasonings. Mix until well incorporated and mixture holds together.
- Form small tot-shaped logs or rounds with your hands. Place on a tray lined with parchment paper.
- For pan-frying: Heat olive oil in a skillet and cook tots until golden brown on all sides. For baking: Preheat oven to 200°C (400°F). Line a baking sheet, spray with oil, and bake tots for 18–20 minutes, flipping halfway, until crispy.
- In a small bowl, mix yogurt, lemon juice, zest, dill, garlic, salt, and pepper. Chill until ready to serve.
- Plate tots with the zesty yogurt dip in the center. Garnish with extra dill or parsley.

- Ensure to squeeze out as much moisture from the squash as possible for the best texture.
- Feel free to customize the herbs used in the tots and dip.
