Description

Delicious and crispy Cheesy Yellow Squash Tots served with a refreshing Zesty Yogurt Dip.


Ingredients

  • 2 medium yellow squash (grated, excess moisture squeezed out)
  • 1 small onion, finely grated
  • 1 cup shredded cheddar cheese
  • ½ cup parmesan cheese, grated
  • 1 cup breadcrumbs (panko or regular)
  • 2 large eggs
  • 2 tbsp fresh parsley or dill, chopped
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • Olive oil (for pan-frying or baking spray if baking)
  • 1 cup Greek yogurt (for the dip)
  • 1 tbsp lemon juice (for the dip)
  • 1 tsp lemon zest (for the dip)
  • 1 tbsp fresh dill, finely chopped (for the dip)
  • 1 garlic clove, minced (or ½ tsp garlic powder for the dip)
  • Salt & pepper, to taste (for the dip)

Instructions

  1. Grate squash and onion, then place in a clean towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial to ensure crispy tots.
  2. In a large bowl, combine grated squash, onion, cheeses, breadcrumbs, eggs, herbs, and seasonings. Mix until well incorporated and mixture holds together.
  3. Form small tot-shaped logs or rounds with your hands. Place on a tray lined with parchment paper.
  4. For pan-frying: Heat olive oil in a skillet and cook tots until golden brown on all sides. For baking: Preheat oven to 200°C (400°F). Line a baking sheet, spray with oil, and bake tots for 18–20 minutes, flipping halfway, until crispy.
  5. In a small bowl, mix yogurt, lemon juice, zest, dill, garlic, salt, and pepper. Chill until ready to serve.
  6. Plate tots with the zesty yogurt dip in the center. Garnish with extra dill or parsley.
