A one-pan Tex-Mex style dinner packed with seasoned ground beef, fluffy rice, melty cheese, and topped with fresh veggies and jalapeños. It’s hearty, cheesy, and perfect for weeknight comfort food.

- 1 lb (450 g) ground beef (or ground turkey/chicken)
- 1 small onion, diced
- 1 packet taco seasoning (or 2 tbsp homemade blend)
- 1 cup long-grain white rice
- 2 ¼ cups beef broth (or chicken/vegetable broth)
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 cup shredded cheddar cheese (or Mexican blend)
- Diced fresh tomatoes (for topping)
- Red onion, finely chopped (for topping)
- Jalapeño slices (fresh or pickled, for topping)
- Fresh cilantro, chopped (for topping)
- Sour cream or guacamole (for serving)
Instructions
- Heat a large cast iron skillet or deep pan over medium heat.
- Add ground beef and onion. Cook until beef is browned and onions are softened. Drain excess fat if needed.
- Stir in taco seasoning and cook for 1 minute to bloom the spices.
- Add rice, broth, and diced tomatoes with chilies. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, until rice is cooked and liquid is absorbed.
- Remove lid and sprinkle shredded cheese evenly over the top.
- Cover again for 2–3 minutes until cheese is melted.
- Remove from heat and top with diced fresh tomatoes, onions, jalapeño slices, and cilantro.
- Serve hot with optional sour cream or guacamole.
Notes
- For a spicier dish, add more jalapeños or use spicy taco seasoning.
- This recipe can be made with ground turkey or chicken for a lighter option.
