Ingredients

  • 2 cups waffle mix (plus ingredients listed on package, usually eggs, oil, and milk)
  • 1 lb ground beef
  • 1 packet taco seasoning mix (or 2 tbsp homemade taco seasoning)
  • ⅔ cup water
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • ½ cup shredded mozzarella cheese
  • ½ cup salsa or pizza sauce (optional for base)
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • Sour cream
  • Jalapeño slices (optional)

Instructions

  1. Preheat your waffle iron and prepare batter according to package directions.
  2. Cook waffles until golden brown and slightly crispy. Set aside.
  3. In a skillet, cook ground beef over medium heat until browned.
  4. Drain excess fat, then stir in taco seasoning and water.
  5. Simmer until thickened, about 5 minutes.
  6. Place one waffle on a baking sheet. Spread with a thin layer of salsa or pizza sauce (optional).
  7. Top with a portion of taco meat and sprinkle with cheddar and mozzarella cheese.
  8. Place another waffle on top (or keep it open-faced).
  9. Sprinkle more cheese over the top.
  10. Preheat oven to 375°F (190°C).
  11. Bake assembled waffles for 5–7 minutes, until cheese is fully melted.
  12. Remove from oven and add toppings: diced tomatoes, onion, cilantro, sour cream, and jalapeños.
