- 2 cups waffle mix (plus ingredients listed on package, usually eggs, oil, and milk)
- 1 lb ground beef
- 1 packet taco seasoning mix (or 2 tbsp homemade taco seasoning)
- ⅔ cup water
- 1 cup shredded cheddar cheese (or Mexican blend)
- ½ cup shredded mozzarella cheese
- ½ cup salsa or pizza sauce (optional for base)
- ½ cup diced tomatoes
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- Sour cream
- Jalapeño slices (optional)
Instructions
- Preheat your waffle iron and prepare batter according to package directions.
- Cook waffles until golden brown and slightly crispy. Set aside.
- In a skillet, cook ground beef over medium heat until browned.
- Drain excess fat, then stir in taco seasoning and water.
- Simmer until thickened, about 5 minutes.
- Place one waffle on a baking sheet. Spread with a thin layer of salsa or pizza sauce (optional).
- Top with a portion of taco meat and sprinkle with cheddar and mozzarella cheese.
- Place another waffle on top (or keep it open-faced).
- Sprinkle more cheese over the top.
- Preheat oven to 375°F (190°C).
- Bake assembled waffles for 5–7 minutes, until cheese is fully melted.
- Remove from oven and add toppings: diced tomatoes, onion, cilantro, sour cream, and jalapeños.
