Description

A delicious and easy-to-make Cheesy Taco Lasagna Bake that combines the flavors of tacos and lasagna in a hearty dish.


Ingredients

  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp oregano, salt & pepper)
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned & drained)
  • 2 cups salsa (or enchilada sauce for richer flavor)
  • 810 flour or corn tortillas (medium-sized, cut to fit baking dish)
  • 3 cups shredded Mexican blend cheese (cheddar, Monterey Jack, mozzarella mix works too)
  • 1 cup sour cream (plus more for topping)

Instructions

  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  2. Stir in taco seasoning, beans, corn, and salsa. Simmer for 3–4 minutes until combined.
  3. Preheat oven to 375°F (190°C).
  4. Grease a 9×13-inch baking dish.
  5. Place a layer of tortillas at the bottom (cutting pieces to fit).
  6. Spread ⅓ of the beef mixture over tortillas.
  7. Add ½ cup sour cream in dollops and spread lightly.
  8. Sprinkle with 1 cup shredded cheese.
  9. Repeat layers (tortillas → beef → sour cream → cheese) until dish is filled, ending with a cheese layer on top.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes, until cheese is melted and bubbly.
  11. Let stand for 10 minutes before slicing to set.
  12. Top with sour cream, diced tomatoes, onion, cilantro, and jalapeños if desired.

  • Can substitute ground beef with ground turkey for a leaner option.
  • For a vegetarian version, omit meat and add more beans and vegetables.
