Description
A delicious and easy-to-make Cheesy Taco Lasagna Bake that combines the flavors of tacos and lasagna in a hearty dish.

- 1 lb (450 g) ground beef (or ground turkey)
- 1 packet taco seasoning (or homemade blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp oregano, salt & pepper)
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned & drained)
- 2 cups salsa (or enchilada sauce for richer flavor)
- 8–10 flour or corn tortillas (medium-sized, cut to fit baking dish)
- 3 cups shredded Mexican blend cheese (cheddar, Monterey Jack, mozzarella mix works too)
- 1 cup sour cream (plus more for topping)
Instructions
- In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
- Stir in taco seasoning, beans, corn, and salsa. Simmer for 3–4 minutes until combined.
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish.
- Place a layer of tortillas at the bottom (cutting pieces to fit).
- Spread ⅓ of the beef mixture over tortillas.
- Add ½ cup sour cream in dollops and spread lightly.
- Sprinkle with 1 cup shredded cheese.
- Repeat layers (tortillas → beef → sour cream → cheese) until dish is filled, ending with a cheese layer on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes, until cheese is melted and bubbly.
- Let stand for 10 minutes before slicing to set.
- Top with sour cream, diced tomatoes, onion, cilantro, and jalapeños if desired.
Notes
- Feel free to customize with your favorite toppings.
- Can substitute ground beef with ground turkey for a leaner option.
- For a vegetarian version, omit meat and add more beans and vegetables.
