- 3 ½ cups all-purpose flour
- 1 packet (2 ¼ tsp) instant yeast
- 1 ¼ cups warm water
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 2 cups cooked shredded birria beef (homemade or leftovers)
- 2 cups shredded mozzarella cheese
- ½ cup Oaxaca cheese (optional, for authentic stretch)
- 1 cup pizza sauce or birria consommé (for extra flavor)
- 2 cups shredded mozzarella cheese
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- In a large bowl, mix warm water, sugar, and yeast. Let sit until foamy (5 minutes).
- Add flour, salt, and olive oil. Mix and knead until smooth, about 8 minutes.
- Place in a greased bowl, cover, and let rise until doubled, about 1 hour.
- Set oven to 425°F (220°C). Grease and line a round pizza pan.
- Divide dough into two portions: one slightly larger for the base, one smaller for the top.
- Roll out larger dough and place it in the pan, hanging slightly over the edges.
- Spread shredded birria beef and mozzarella evenly over dough.
- Roll out second dough portion and place on top, sealing edges well.
- Spread pizza sauce (or consommé) over the top layer.
- Sprinkle generously with mozzarella.
- Bake 20–25 minutes, until golden brown and bubbly.
- Let cool 5 minutes before slicing. Garnish with cilantro or parsley if desired.
Notes
- For best results, use homemade birria for a richer flavor.
- Feel free to customize toppings based on your preference.
- Let the pizza cool slightly before slicing to maintain the cheese stretch.
