Description

A delicious and unique pizza that combines the flavors of cheesy stuffed birria with a crispy crust, perfect for any pizza lover.


Ingredients

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 ¼ cups warm water
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 2 cups cooked shredded birria beef (homemade or leftovers)
  • 2 cups shredded mozzarella cheese
  • ½ cup Oaxaca cheese (optional, for authentic stretch)
  • 1 cup pizza sauce or birria consommé (for extra flavor)
  • 2 cups shredded mozzarella cheese
  • Fresh cilantro or parsley (optional, for garnish)

Instructions

  1. In a large bowl, mix warm water, sugar, and yeast. Let sit until foamy (5 minutes).
  2. Add flour, salt, and olive oil. Mix and knead until smooth, about 8 minutes.
  3. Place in a greased bowl, cover, and let rise until doubled, about 1 hour.
  4. Set oven to 425°F (220°C). Grease and line a round pizza pan.
  5. Divide dough into two portions: one slightly larger for the base, one smaller for the top.
  6. Roll out larger dough and place it in the pan, hanging slightly over the edges.
  7. Spread shredded birria beef and mozzarella evenly over dough.
  8. Roll out second dough portion and place on top, sealing edges well.
  9. Spread pizza sauce (or consommé) over the top layer.
  10. Sprinkle generously with mozzarella.
  11. Bake 20–25 minutes, until golden brown and bubbly.
  12. Let cool 5 minutes before slicing. Garnish with cilantro or parsley if desired.
