These indulgent pancakes are stuffed with savory breakfast sausage and gooey melted cheese, then stacked high, topped with butter, and drizzled with golden maple syrup. They’re the perfect mix of sweet, salty, cheesy, and fluffy — a breakfast worth waking up for!


Ingredients

  • 1 lb (450 g) breakfast sausage, cooked and crumbled
  • 1 cup shredded mozzarella cheese (or cheddar/monterey jack)
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 ¾ cups buttermilk (or milk + 1 tbsp lemon juice)
  • ¼ cup melted butter (plus more for cooking)
  • Butter pats
  • Maple syrup

Instructions

  1. Cook breakfast sausage in a skillet until browned and crumbled. Drain excess fat and let cool slightly.
  2. Mix with shredded mozzarella (or cheese of choice).
  3. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk eggs, buttermilk, and melted butter.
  5. Combine wet and dry ingredients, stirring gently until just combined (batter should be slightly lumpy).
  6. Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.
  7. Pour about ¼ cup of batter onto the skillet.
  8. Quickly spoon a heaping tablespoon of the sausage-cheese mixture in the center.
  9. Cover with another 2 tbsp batter to seal the filling.
  10. Cook until bubbles form on the surface (2–3 minutes), then flip and cook another 2–3 minutes until golden brown and cheese is melty.
  11. Stack pancakes tall, top with butter, and drizzle generously with maple syrup.

  • For a spicier version, use spicy sausage.
