Description

  • 2 lbs (900 g) baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tbsp ranch seasoning mix (store-bought or homemade)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper, to taste
  • ½ cup grated Parmesan cheese
  • ½ cup shredded cheddar cheese
  • 1 tbsp unsalted butter (optional, for extra crispness)
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss halved potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Add Parmesan cheese and toss again until evenly coated.
  3. Arrange potatoes cut side down on the baking sheet (for maximum crispiness). Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
  4. Sprinkle shredded cheddar over the hot potatoes during the last 5 minutes of baking. Allow cheese to melt and form a delicious crust.
  5. Drizzle melted butter over the top if desired. Sprinkle with fresh parsley. Serve immediately — hot, cheesy, and irresistible!
