- 2 lbs (900 g) baby potatoes, halved
- 3 tbsp olive oil
- 2 tbsp ranch seasoning mix (store-bought or homemade)
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper, to taste
- ½ cup grated Parmesan cheese
- ½ cup shredded cheddar cheese
- 1 tbsp unsalted butter (optional, for extra crispness)
- 1 tbsp fresh parsley, finely chopped
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss halved potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Add Parmesan cheese and toss again until evenly coated.
- Arrange potatoes cut side down on the baking sheet (for maximum crispiness). Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Sprinkle shredded cheddar over the hot potatoes during the last 5 minutes of baking. Allow cheese to melt and form a delicious crust.
- Drizzle melted butter over the top if desired. Sprinkle with fresh parsley. Serve immediately — hot, cheesy, and irresistible!
