Description

A delicious and creamy Cheesy French Onion Cauliflower Bake that combines roasted cauliflower with caramelized onions and a blend of cheeses for a delightful side dish.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil (divided)
  • Salt & black pepper, to taste
  • 2 large onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tsp sugar (optional, helps caramelization)
  • 2 cloves garlic, minced
  • ½ cup beef broth (or vegetable broth)
  • 1 cup heavy cream
  • 1 tsp thyme (fresh or dried)
  • 1 ½ cups Gruyère cheese, shredded (or Swiss/cheddar mix)
  • ½ cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with 2 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20–25 minutes until golden and tender.
  3. In a large skillet, heat butter and 1 tbsp olive oil over medium heat. Add onions, season with salt, and cook slowly, stirring often, until deep golden brown (25–30 minutes). Stir in sugar (if using) and garlic during the last 5 minutes. Deglaze pan with beef broth; simmer until slightly reduced.
  4. Stir heavy cream and thyme into the onions. Simmer 3–4 minutes until slightly thickened.
  5. Place roasted cauliflower in a greased baking dish. Pour onion-cream mixture evenly over cauliflower. Top with Gruyère and Parmesan cheese.
  6. Bake uncovered at 375°F (190°C) for 15–20 minutes, until cheese is melted and bubbly.
  7. Garnish with fresh parsley and serve warm as a hearty side dish.

Notes

  • For a vegetarian option, use vegetable broth instead of beef broth.
  • Feel free to mix different types of cheese for varied flavor.
