Description

Cheesy Chili Mac Delight is a comforting and hearty dish that combines ground meat, pasta, and a rich chili flavor, topped with melted cheese.


Ingredients

  • 1 lb (450 g) ground beef (or turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained & rinsed
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth (or chicken/vegetable broth)
  • 2 cups elbow macaroni (uncooked)
  • 12 tbsp chili powder (to taste)
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups shredded cheddar cheese (or a mix of cheddar & Monterey Jack)
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. In a large skillet or pot, cook ground beef (or turkey) over medium heat until browned. Drain excess fat if needed.
  2. Add diced onion and garlic, sauté until softened (2–3 minutes).
  3. Stir in chili powder, cumin, paprika, salt, and pepper.
  4. Add diced tomatoes, tomato sauce, beans, and broth. Stir well.
  5. Stir in uncooked macaroni.
  6. Bring mixture to a boil, then reduce heat to medium-low.
  7. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  8. Remove from heat and stir in 1½ cups of shredded cheese until melted and creamy.
  9. Sprinkle remaining ½ cup cheese on top. Cover for 2 minutes to melt.
  10. Scoop into bowls, garnish with parsley or cilantro, and serve hot.

  • For a vegetarian version, substitute ground meat with a plant-based alternative.
