Delicious and hearty Cheesy Beef & Potato Burritos that are perfect for the whole family.
Ingredients

- 1 lb (450 g) ground beef
- 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp paprika, ½ tsp cumin, ½ tsp garlic powder, ½ tsp onion powder, salt & pepper)
- ½ cup water
- 3 cups frozen tater tots (or diced cooked potatoes)
- 1 tbsp olive oil
- 6 large flour tortillas
- 2 cups shredded cheddar cheese (or Mexican blend)
- 1 cup sour cream
- ½ cup diced tomatoes
- ¼ cup diced red onion
- 2 tbsp fresh cilantro or parsley, chopped
Instructions
- Cook the Potatoes: Bake or air fry tater tots until crispy golden brown (follow package instructions).
- Make the Beef Filling: In a skillet over medium heat, cook ground beef until browned. Drain fat, add taco seasoning and water, simmer 5 minutes until thickened.
- Assemble Burritos: Warm tortillas in a skillet or microwave for flexibility. In each tortilla, layer: a spoonful of beef, a few tater tots, shredded cheese, a dollop of sour cream, tomatoes, and onions. Roll tightly into a burrito.
- Toast (Optional but recommended): Heat burritos seam-side down in a skillet for 1–2 minutes per side until golden and cheese inside is melty.

- Feel free to customize the toppings based on your family’s preferences.
- These burritos can be made ahead of time and frozen for later use.
- For a spicier kick, add jalapeños or hot sauce.
