A delightful summer treat that combines the creamy goodness of cheesecake with fresh fruits.


Ingredients

  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups heavy whipping cream (whipped to stiff peaks)
  • 2 cups strawberries (halved)
  • 1 ½ cups green grapes
  • 1 ½ cups red grapes
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup diced melon (optional)
  • 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
  • 2 tbsp melted butter
  • Caramel sauce (for drizzling)

Instructions

  1. In a large bowl, beat cream cheese until smooth and creamy.
  2. Add powdered sugar and vanilla; beat again until fluffy.
  3. Fold in the whipped cream until well combined.
  4. Mix graham cracker crumbs with melted butter.
  5. Sprinkle half into the bottom of your serving tray or dish.
  6. Spread cheesecake mixture evenly over the graham cracker base.
  7. Arrange strawberries, grapes, pineapple, and other fruits on top.
  8. Sprinkle remaining graham crumbs over the fruit.
  9. Drizzle generously with caramel sauce.
  10. Refrigerate for at least 1 hour before serving to let the flavors meld.
  11. Garnish with extra fruit or mint leaves for presentation.
