- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups heavy whipping cream (whipped to stiff peaks)
- 2 cups strawberries (halved)
- 1 ½ cups green grapes
- 1 ½ cups red grapes
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup diced melon (optional)
- 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
- 2 tbsp melted butter
- Caramel sauce (for drizzling)
Instructions
- In a large bowl, beat cream cheese until smooth and creamy.
- Add powdered sugar and vanilla; beat again until fluffy.
- Fold in the whipped cream until well combined.
- Mix graham cracker crumbs with melted butter.
- Sprinkle half into the bottom of your serving tray or dish.
- Spread cheesecake mixture evenly over the graham cracker base.
- Arrange strawberries, grapes, pineapple, and other fruits on top.
- Sprinkle remaining graham crumbs over the fruit.
- Drizzle generously with caramel sauce.
- Refrigerate for at least 1 hour before serving to let the flavors meld.
- Garnish with extra fruit or mint leaves for presentation.
