Ingredients
Scale
- 1 lb (450 g) ground beef (80/20)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- ⅓ cup finely chopped dill pickles
- 1 cup shredded cheddar cheese
- 12 egg roll wrappers
- 1 tbsp vegetable oil (plus more for frying or brushing)
- Salt and pepper, to taste
- Sesame seeds (optional, for garnish)
- ½ cup mayonnaise
- 2 tbsp French dressing (or Thousand Island)
- 1 tbsp finely diced dill pickles
- 1 tsp white vinegar
- 1 tsp sugar
- ½ tsp onion powder
- ½ tsp paprika
Instructions
- Heat 1 tbsp oil in a skillet over medium heat.
- Add onion and cook until softened, about 3 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.
- Stir in chopped pickles, cheddar cheese, salt, and pepper. Mix until the cheese melts and everything is combined. Remove from heat and let the mixture cool slightly.
- In a small bowl, whisk together all sauce ingredients until smooth. Cover and refrigerate until ready to serve.
- Lay an egg roll wrapper in a diamond shape on a clean surface. Spoon about 2–3 tbsp of the beef mixture into the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly. Use a little water to seal the edge. Repeat with remaining wrappers and filling.
- For frying, heat oil in a deep skillet or fryer to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes, turning until golden brown. Drain on paper towels.
- For baking, preheat oven to 400°F (200°C). Place egg rolls on a parchment-lined baking sheet, brush with oil, and sprinkle with sesame seeds if desired. Bake for 12–15 minutes until crispy.
- For air frying, preheat air fryer to 375°F (190°C). Spray egg rolls with cooking spray, air fry for 8–10 minutes, turning halfway.
- Serve warm with the “Big Mac” sauce for dipping.
Notes
- Ensure the oil is hot enough before frying for a crispy texture.
- Feel free to customize the filling with additional ingredients like bacon or different cheeses.
- Store any leftover egg rolls in an airtight container in the refrigerator.
