  • 4 large eggs
  • ½ lb (225 g) breakfast sausage (cooked & crumbled)
  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar
  • ¼ cup red onion, diced (optional)
  • 1 tbsp fresh parsley or chives, chopped
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste

Instructions

  1. Preheat Oven: Heat oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper.
  2. Make Cheese Crust: Spread 2 cups mozzarella + 1 cup cheddar evenly on the pan in a large circle (about 10–12 inches).
  3. Bake: Bake 8–10 minutes until cheese is melted, bubbly, and lightly golden. Remove from oven.
  4. Add Toppings: Crack eggs evenly across the cheese base. Sprinkle sausage, red onion, and extra mozzarella + cheddar on top. Season with salt, pepper, and red pepper flakes.
  5. Bake Again: Return to oven and bake 10–12 minutes, until eggs are set to your liking and cheese is melted.
  6. Garnish & Serve: Sprinkle with fresh parsley or chives. Slice and enjoy hot.
