- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large eggs
- ½ lb (225 g) breakfast sausage (cooked & crumbled)
- 1 cup shredded mozzarella
- ½ cup shredded cheddar
- ¼ cup red onion, diced (optional)
- 1 tbsp fresh parsley or chives, chopped
- 1 tsp red pepper flakes (optional, for heat)
- Salt & black pepper, to taste
Instructions
- Preheat Oven: Heat oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper.
- Make Cheese Crust: Spread 2 cups mozzarella + 1 cup cheddar evenly on the pan in a large circle (about 10–12 inches).
- Bake: Bake 8–10 minutes until cheese is melted, bubbly, and lightly golden. Remove from oven.
- Add Toppings: Crack eggs evenly across the cheese base. Sprinkle sausage, red onion, and extra mozzarella + cheddar on top. Season with salt, pepper, and red pepper flakes.
- Bake Again: Return to oven and bake 10–12 minutes, until eggs are set to your liking and cheese is melted.
- Garnish & Serve: Sprinkle with fresh parsley or chives. Slice and enjoy hot.
