Delicious and fun Cereal Milk Cream Puffs filled with a creamy cereal-infused pastry cream and topped with colorful sprinkles.

- ½ cup (1 stick) unsalted butter
- 1 cup water
- 1 tbsp sugar
- ¼ tsp salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups milk
- 1 cup sweet cereal (like Fruity Pebbles or Froot Loops)
- 4 large egg yolks
- ½ cup sugar
- 3 tbsp cornstarch
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Whipped cream (for folding into pastry cream)
- Extra colorful cereal pieces
- Sprinkles
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, bring water, butter, sugar, and salt to a boil.
- Add flour all at once, stirring vigorously until dough pulls away from sides.
- Cool slightly, then beat in eggs one at a time until glossy and smooth.
- Pipe or spoon onto the baking sheet (2-inch rounds).
- Bake 20–25 minutes, until golden and puffed. Cool completely.
- Warm milk in a saucepan, then pour over cereal in a bowl. Let steep 20 minutes. Strain and discard cereal.
- In another bowl, whisk egg yolks, sugar, and cornstarch until pale.
- Gradually whisk in the cereal-infused milk.
- Return to saucepan, cook over medium heat until thickened.
- Remove from heat, stir in butter and vanilla. Cover with plastic wrap (touching the surface) and chill.
- Slice cooled puffs in half.
- Fold whipped cream into pastry cream, then pipe filling inside.
- Sprinkle extra cereal pieces inside for crunch.
- Replace tops, dust with sprinkles, and garnish with more cereal.
Notes
- Ensure the cream puffs are completely cooled before filling to prevent sogginess.
- Feel free to use any sweet cereal of your choice for the pastry cream.
- These cream puffs are best enjoyed fresh but can be stored in the refrigerator for a day.
