Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup water
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 1 cup sweet cereal (like Fruity Pebbles or Froot Loops)
  • 4 large egg yolks
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Whipped cream (for folding into pastry cream)
  • Extra colorful cereal pieces
  • Sprinkles

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, bring water, butter, sugar, and salt to a boil.
  3. Add flour all at once, stirring vigorously until dough pulls away from sides.
  4. Cool slightly, then beat in eggs one at a time until glossy and smooth.
  5. Pipe or spoon onto the baking sheet (2-inch rounds).
  6. Bake 20–25 minutes, until golden and puffed. Cool completely.
  7. Warm milk in a saucepan, then pour over cereal in a bowl. Let steep 20 minutes. Strain and discard cereal.
  8. In another bowl, whisk egg yolks, sugar, and cornstarch until pale.
  9. Gradually whisk in the cereal-infused milk.
  10. Return to saucepan, cook over medium heat until thickened.
  11. Remove from heat, stir in butter and vanilla. Cover with plastic wrap (touching the surface) and chill.
  12. Slice cooled puffs in half.
  13. Fold whipped cream into pastry cream, then pipe filling inside.
  14. Sprinkle extra cereal pieces inside for crunch.
  15. Replace tops, dust with sprinkles, and garnish with more cereal.
