A delicious blend of carrot cake and cheesecake topped with a creamy frosting, perfect for any occasion.

- 1 cup all-purpose flour (120 g)
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp salt
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups grated carrots
- ½ cup chopped pecans (or walnuts)
- 16 oz (450 g) cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or heavy cream)
- 1 cup cream cheese (softened)
- ½ cup butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Chopped pecans or walnuts (for garnish)
- White chocolate shavings (optional)
- Fresh mint leaves (optional)
Instructions
- Preheat oven to 175°C (350°F). Grease and line a springform pan.
- In a bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat oil, granulated sugar, brown sugar, eggs, and vanilla.
- Mix wet and dry ingredients until just combined. Fold in grated carrots and pecans.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
- Stir in vanilla and sour cream until creamy.
- Spread half of the carrot cake batter into the pan. Pour the cheesecake batter evenly on top.
- Add the remaining carrot cake batter on top (don’t worry if it swirls a little).
- Bake for 55–65 minutes, until the center is set. Cool completely, then chill for at least 4 hours (preferably overnight).
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, whip until fluffy.
- Spread over chilled cake. Top with chopped pecans, white chocolate shavings, and mint leaves.
Notes
- For best results, chill the cake overnight before serving.
- Feel free to substitute walnuts for pecans if desired.
- White chocolate shavings are optional but add a nice touch.
