Description

A delicious blend of carrot cake and cheesecake topped with a creamy frosting, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour (120 g)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups grated carrots
  • ½ cup chopped pecans (or walnuts)
  • 16 oz (450 g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or heavy cream)
  • 1 cup cream cheese (softened)
  • ½ cup butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Chopped pecans or walnuts (for garnish)
  • White chocolate shavings (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line a springform pan.
  2. In a bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat oil, granulated sugar, brown sugar, eggs, and vanilla.
  4. Mix wet and dry ingredients until just combined. Fold in grated carrots and pecans.
  5. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  6. Stir in vanilla and sour cream until creamy.
  7. Spread half of the carrot cake batter into the pan. Pour the cheesecake batter evenly on top.
  8. Add the remaining carrot cake batter on top (don’t worry if it swirls a little).
  9. Bake for 55–65 minutes, until the center is set. Cool completely, then chill for at least 4 hours (preferably overnight).
  10. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, whip until fluffy.
  11. Spread over chilled cake. Top with chopped pecans, white chocolate shavings, and mint leaves.

Notes

  • For best results, chill the cake overnight before serving.
  • Feel free to substitute walnuts for pecans if desired.
  • White chocolate shavings are optional but add a nice touch.
