  • 4 large eggs

  • 1 cup buttermilk (or milk + 1 tsp vinegar)
  • ½ cup caramel sauce (swirled into batter)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tsp vanilla extract
  • 23 tbsp heavy cream (for consistency)
  • 1 cup sugar (for caramel drizzle)
  • 6 tbsp unsalted butter, cubed (for caramel drizzle)
  • ½ cup heavy cream (for caramel drizzle)
  • Pinch of salt (for caramel drizzle)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then vanilla.
  5. Add dry ingredients alternately with buttermilk, mixing until just combined.
  6. Pour half of the batter into pans, drizzle caramel sauce over, then swirl lightly with a knife. Top with remaining batter.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  8. Beat cream cheese and butter together until smooth.
  9. Add powdered sugar gradually, mixing until fluffy.
  10. Stir in vanilla and cream until spreadable.
  11. Heat sugar in a saucepan over medium heat until melted and amber.
  12. Add butter (carefully, it will bubble) and stir until melted.
  13. Slowly whisk in cream until smooth. Add a pinch of salt. Let cool to drizzle consistency.
  14. Layer cakes with cream cheese frosting between them.
  15. Spread frosting over the top and sides.
  16. Drizzle caramel sauce over the cake, letting it drip down the sides.
  17. Use extra caramel for serving if desired.
