  • 2 cups graham cracker crumbs (or digestive biscuits, crushed)
  • ½ cup unsalted butter, melted
  • ¼ cup brown sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 medium apples, peeled & diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ¼ cup cold butter, cubed
  • 1 cup sugar
  • ¼ cup water
  • ½ cup heavy cream
  • 3 tbsp unsalted butter
  • Pinch of sea salt

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham crumbs, melted butter, and brown sugar until combined. Press into the bottom of a springform pan. Bake 8–10 minutes. Cool slightly.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Mix in sour cream and vanilla. Pour filling over cooled crust.
  3. In a skillet, sauté apples with butter, brown sugar, cinnamon, and nutmeg until softened. Cool slightly. In a bowl, mix flour, oats, brown sugar, and cold butter until crumbly. Layer sautéed apples and crumble over cheesecake batter.
  4. Bake cheesecake at 325°F (160°C) for 60–70 minutes, until center is just set. Turn off oven, crack door open, and let cheesecake rest 1 hour. Chill at least 4 hours or overnight.
  5. Heat sugar and water in saucepan until amber in color. Slowly whisk in cream (careful, it will bubble). Stir in butter and salt until smooth. Cool slightly before drizzling.
  6. Before serving, drizzle cheesecake generously with caramel sauce.

  • For a gluten-free version, use gluten-free graham crackers or a nut-based crust.
  • Make sure the cream cheese is softened for a smooth filling.
  • Chilling the cheesecake overnight enhances the flavors.
