- 3 cups all-purpose flour
- 1 packet (2 ¼ tsp) instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 cup warm water (110°F / 45°C)
- 2 cups elbow macaroni, cooked al dente
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk (warm)
- 2 cups shredded sharp cheddar cheese
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 cup cooked shredded chicken (rotisserie or poached)
- ¼ cup buffalo sauce (plus more for drizzling)
- 1 cup mozzarella cheese, shredded
- ½ cup cooked bacon, crumbled
- 2 tablespoons chives or green onions, chopped
- Ranch or blue cheese dressing, for drizzle
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Stir in flour, salt, and olive oil. Knead into a soft dough for 5–7 minutes.
- Place in a greased bowl, cover, and let rise for 1 hour or until doubled.
- In a saucepan, melt butter and whisk in flour to make a roux.
- Slowly whisk in warm milk and cook until slightly thickened.
- Stir in cheddar cheese until smooth.
- Season with garlic powder, paprika, salt, and pepper.
- Add cooked macaroni and stir to coat. Set aside.
- Toss shredded chicken with buffalo sauce until fully coated.
- Preheat oven to 475°F (245°C).
- Roll out the dough on a floured surface and transfer to a pizza stone or baking sheet.
- Spread a layer of mac & cheese over the crust.
- Sprinkle with mozzarella cheese.
- Top with buffalo chicken and bacon crumbles.
- Bake for 12–15 minutes until crust is golden and cheese is bubbling.
- Drizzle with ranch or blue cheese dressing.
- Sprinkle with fresh chives or green onions.
- Slice and serve hot for the ultimate game-day mashup.
Notes
- For extra heat, add more buffalo sauce on top before serving.
- Feel free to substitute the chicken with tofu for a vegetarian option.
