Description
A simple and flavorful Bruschetta Chicken Bake recipe that combines tender chicken with fresh tomatoes, mozzarella, and basil.

- 4 boneless, skinless chicken breasts (cut into large chunks)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
- Salt & black pepper, to taste
- 2 cups cherry tomatoes (or diced Roma tomatoes)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup fresh basil leaves, chopped
- 1 tbsp balsamic glaze (optional, for drizzling)
Instructions
- Preheat oven to 190°C (375°F).
- Season chicken with olive oil, garlic, Italian seasoning, salt, and pepper.
- Heat a skillet over medium-high and sear chicken pieces for 2–3 minutes per side until golden (they will finish cooking in the oven).
- Transfer seared chicken to a baking dish.
- Top with diced tomatoes, mozzarella, and Parmesan cheese.
- Place in oven and bake for 20–25 minutes, until chicken is fully cooked and cheese is melted and bubbly.
- Remove from oven and sprinkle with fresh basil.
- Drizzle with balsamic glaze if desired.
- Serve hot with pasta, rice, or crusty bread.
Notes
- For a spicier version, add red pepper flakes to the seasoning.
- Can substitute chicken with turkey for a leaner option.
- Leftovers can be stored in the refrigerator for up to 3 days.
