Ingredients

  • 4 cups mixed greens (baby spinach, arugula, or spring mix)
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • ½ cup feta cheese, crumbled
  • ½ cup walnuts (or pecans), lightly toasted
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar (or balsamic glaze for drizzling)
  • 1 tsp honey (or maple syrup)
  • ½ tsp Dijon mustard
  • Salt & black pepper, to taste

Instructions

  1. In a small jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  2. Shake well until emulsified.
  3. Arrange greens in a large bowl or platter.
  4. Layer with peach slices and blueberries.
  5. Sprinkle crumbled feta and toasted walnuts over the top.
  6. Drizzle with the balsamic dressing (or glaze if you prefer thicker sweetness).
  7. Toss gently before serving or leave layered for presentation.

  • For a vegan option, omit the feta cheese or use a plant-based alternative.
