A refreshing salad combining the sweetness of peaches and blueberries with the creaminess of feta cheese, perfect for summer.
Ingredients

- 4 cups mixed greens (baby spinach, arugula, or spring mix)
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- ½ cup feta cheese, crumbled
- ½ cup walnuts (or pecans), lightly toasted
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar (or balsamic glaze for drizzling)
- 1 tsp honey (or maple syrup)
- ½ tsp Dijon mustard
- Salt & black pepper, to taste
Instructions
- In a small jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Shake well until emulsified.
- Arrange greens in a large bowl or platter.
- Layer with peach slices and blueberries.
- Sprinkle crumbled feta and toasted walnuts over the top.
- Drizzle with the balsamic dressing (or glaze if you prefer thicker sweetness).
- Toss gently before serving or leave layered for presentation.
Notes
- For a vegan option, omit the feta cheese or use a plant-based alternative.
- Feel free to substitute walnuts with pecans if preferred.
- This salad is best served fresh but can be prepared in advance; just add the dressing right before serving.
