Ingredients

  • ½ cup cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup buttermilk
  • 1 cup hot coffee
  • 2 tsp vanilla extract
  • 2 cups cherry pie filling or homemade cherry compote
  • Optional: 2–3 tbsp Kirsch
  • 2 cups cold heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Optional: 2 tbsp cream cheese
  • 150 g dark chocolate, chopped
  • ¾ cup heavy cream
  • 1 tbsp butter
  • Fresh cherries
  • Chocolate shavings or curls

Instructions

  1. Preheat oven to 175°C (350°F) and line a rectangular cake pan with parchment.
  2. In a bowl, whisk together flour, cocoa, sugars, baking soda, baking powder, and salt. Add eggs, oil, buttermilk, and vanilla, whisking until smooth. Pour in hot coffee and mix gently.
  3. Bake for 25–30 minutes until a toothpick comes out clean. Cool completely and slice horizontally into two layers.
  4. Beat heavy cream, powdered sugar, and vanilla on high until fluffy. Fold in cream cheese if using and chill.
  5. Prepare cherry layer by stirring cherry pie filling or simmering fresh cherries with sugar and cornstarch until thick. Add Kirsch if desired.
  6. Assemble the cake by placing the first chocolate layer on a serving plate, spreading with whipped cream and dollops of cherry filling, then adding the second layer on top.
  7. For ganache, heat cream until hot, pour over chopped chocolate, wait 1 minute, then whisk until smooth. Add butter for shine and pour over the top layer.
  8. Decorate with chocolate shavings and fresh cherries. Chill for 1–2 hours before slicing.

  • Ensure the cake layers are completely cool before slicing.
  • For a more intense cherry flavor, use homemade cherry compote.
  • Chilling the cake helps the layers set and makes slicing easier.
