These Cucumber Chicken Salad Roll Ups are a refreshing and healthy snack or appetizer that combines fresh cucumber with a delicious chicken salad.

- 2 large cucumbers
- 2 cups cooked chicken breast, shredded
- ⅓ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 stalk celery, finely chopped
- 1 green onion, finely chopped
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
- Optional: Paprika or everything bagel seasoning for garnish
Instructions
- In a medium bowl, combine the shredded chicken, Greek yogurt, mayonnaise, and Dijon mustard. Stir until well blended. Add chopped celery, green onion, fresh dill, salt, and pepper. Mix thoroughly. Chill for 15–20 minutes to let the flavors meld.
- Wash and dry your cucumbers. Using a vegetable peeler or mandoline slicer, shave long, thin strips from end to end, avoiding the seedy center for easier rolling. Pat the ribbons dry with a paper towel to prevent sogginess.
- Lay out a cucumber ribbon on a flat surface. Spoon about a tablespoon of the chicken salad near one end and gently roll it up like a sushi roll. Repeat with remaining ribbons and filling.
- Arrange the roll ups seam-side down on a platter. You can sprinkle with paprika or everything bagel seasoning for a touch of flavor and flair. Chill for 10–15 minutes before serving.
