Description

A delicious and unique way to cook a whole chicken on the grill, giving it a smoky flavor and juicy texture.


Ingredients

Scale
  • 1 whole chicken (45 lbs)
  • 1 can (12 oz) of beer (Lager or Pilsner)
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium heat (approx 375°F) for indirect grilling.
  2. Remove giblets and pat the chicken completely dry.
  3. Mix dry spices and brown sugar in a bowl to create the rub.
  4. Coat chicken in olive oil, then apply the rub generously inside and out.
  5. Open beer can and discard 1/3 of the liquid. Place can on a solid surface.
  6. Lower chicken onto the can so it sits upright.
  7. Place on the grill (indirect heat) for 1 hour 15 mins or until internal thigh temp is 180°F.
  8. Let rest for 10 minutes before carving.

Notes

  • Make sure the chicken is completely dry for the rub to adhere properly.
  • You can experiment with different beers for varying flavors.
  • Use a meat thermometer to ensure the chicken is cooked properly and reaches the safe internal temperature.
