Ingredients

Scale
  • 6 slices thick-cut bacon
  • ¾ cup mayonnaise (Kewpie or regular)
  • 12 tbsp bacon drippings (from cooking the bacon)

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy.
  2. Remove bacon and place on paper towels to drain.
  3. Reserve 1–2 tablespoons of the rendered bacon drippings.
  4. Once cooled, chop the bacon into fine pieces.
  5. In a medium bowl, combine mayonnaise, bacon drippings, Dijon mustard, and chopped bacon.
  6. Mix until well combined.
  7. Add black pepper or smoked paprika if desired for an extra kick.
  8. Spread generously on burgers, sandwiches, wraps, or use as a dipping sauce for fries.
