Bacon-Wrapped Cheesy Chicken Bombs are a must-try dish that combines juicy chicken, melted cheese, and crispy bacon for a deliciously satisfying meal.

- 3–4 boneless, skinless chicken breasts (cut into halves or thick strips)
- 1 cup cheddar cheese (cut into small cubes or sticks)
- 1 cup bell peppers (red & green, finely chopped)
- 1 jalapeño (optional, finely diced, for heat)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- Salt & black pepper, to taste
- 10–12 slices of bacon
- 2 tbsp fresh parsley (for garnish)
Instructions
- Cut chicken breasts into halves or thick strips. Season with garlic powder, onion powder, paprika, salt, and pepper.
- Place a piece of cheddar cheese and some chopped peppers inside each chicken piece.
- Tightly wrap each chicken piece with 2 slices of bacon, seam side down. Place in a greased baking dish.
- Bake at 375°F (190°C) for 35–40 minutes, or until chicken is cooked through (165°F internal temp) and bacon is crispy. For extra crispiness, broil for 2–3 minutes at the end.
- Sprinkle with fresh parsley and serve hot with your favorite dipping sauce (ranch, BBQ, or spicy aioli work great).
Notes
- For a spicier version, include more jalapeños or use spicy cheese.
- Make sure to check the internal temperature of the chicken to ensure it is fully cooked.
- These can be prepared ahead of time and baked just before serving.
