Description
Bacon-Wrapped Cheeseburger Meatloaf Bombs are a delicious fusion of flavors, combining the classic taste of cheeseburgers with the comfort of meatloaf, all wrapped in crispy bacon.

- 1 ½ pounds ground beef (80/20 works best)
- 1 cup breadcrumbs (panko or regular)
- 1 large egg
- ½ cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 6–8 cubes of cheddar cheese (or mozzarella for extra stretch)
- 12 slices bacon (thin-cut works better for wrapping)
- ½ cup barbecue sauce (your favorite variety)
- Fresh parsley or chives, chopped (for garnish)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until just combined (avoid overmixing for tenderness).
- Scoop about ½ cup of the meat mixture and flatten it in your hand. Place a cube of cheese in the center and wrap the meat around it, sealing completely. Repeat with the rest of the mixture and cheese.
- Wrap each meatball with 1–2 slices of bacon, overlapping slightly. Secure with toothpicks if needed.
- Preheat oven to 400°F (200°C). Place the bacon-wrapped bombs on a parchment-lined baking sheet or wire rack. Brush lightly with barbecue sauce. Bake for 20 minutes, then brush with more barbecue sauce. Bake another 10–15 minutes, until bacon is crispy and internal temperature reaches 160°F (71°C).
- Drizzle with extra barbecue sauce. Sprinkle with fresh parsley or chives. Serve hot with fries, slaw, or as party bites.
Notes
- For a spicier kick, add diced jalapeños to the meat mixture.
- These can be made ahead of time and frozen before baking.
