Description

A delicious twist on a classic dish, this Bacon Cheeseburger Meatloaf combines the flavors of a cheeseburger with the comfort of meatloaf.


Ingredients

  • 2 lb (900 g) 80/20 ground beef
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • ¼ cup milk
  • 1 small onion, finely minced
  • 2 large eggs
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 810 slices bacon
  • Extra cheese for layering (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
  2. In a large bowl, mix panko breadcrumbs and milk, letting them soak for 2–3 minutes.
  3. Add ground beef, onion, eggs, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until combined (do not overmix).
  4. Divide the meat mixture in half. Shape one half into the base layer of the loaf.
  5. Sprinkle evenly with shredded cheese.
  6. Place the remaining meat mixture over the top, sealing the edges to enclose the cheese.
  7. Lay bacon slices over the top of the meatloaf, slightly overlapping.
  8. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C). If desired, broil for 1–2 minutes at the end to crisp the bacon further.
  9. Let rest for 10 minutes before slicing and serve with extra ketchup or burger sauce on the side.

  • For a spicier version, add diced jalapeños to the meat mixture.
  • Ensure the meatloaf is cooked thoroughly by checking the internal temperature.
