Description
A delicious twist on a classic dish, this Bacon Cheeseburger Meatloaf combines the flavors of a cheeseburger with the comfort of meatloaf.

- 2 lb (900 g) 80/20 ground beef
- 1 cup panko breadcrumbs (or regular breadcrumbs)
- ¼ cup milk
- 1 small onion, finely minced
- 2 large eggs
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
- 8–10 slices bacon
- Extra cheese for layering (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
- In a large bowl, mix panko breadcrumbs and milk, letting them soak for 2–3 minutes.
- Add ground beef, onion, eggs, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until combined (do not overmix).
- Divide the meat mixture in half. Shape one half into the base layer of the loaf.
- Sprinkle evenly with shredded cheese.
- Place the remaining meat mixture over the top, sealing the edges to enclose the cheese.
- Lay bacon slices over the top of the meatloaf, slightly overlapping.
- Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C). If desired, broil for 1–2 minutes at the end to crisp the bacon further.
- Let rest for 10 minutes before slicing and serve with extra ketchup or burger sauce on the side.
Notes
- For a spicier version, add diced jalapeños to the meat mixture.
- Ensure the meatloaf is cooked thoroughly by checking the internal temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
