Description

Aurora Galaxy Éclairs are stunning cosmic pastries filled with vanilla custard and topped with a colorful galaxy glaze, perfect for any celebration.


Ingredients

  • 1 cup water
  • ½ cup unsalted butter
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1 tablespoon light corn syrup or honey
  • Gel food coloring (blue, purple, pink, black)
  • Edible glitter or luster dust (optional)
  • Edible pearls or star sprinkles for decoration

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
  3. Add flour all at once and stir vigorously until a dough forms and pulls away from the pan.
  4. Transfer dough to a bowl and let cool 5 minutes.
  5. Beat in eggs one at a time until smooth and glossy.
  6. Transfer to a piping bag with a large round tip and pipe 4–5 inch strips onto the baking sheet.
  7. Bake for 15 minutes, then reduce to 350°F (175°C) and bake another 20 minutes until puffed and golden. Cool completely.
  8. Heat milk in a saucepan until steaming (not boiling).
  9. In a bowl, whisk sugar, egg yolks, and cornstarch until pale.
  10. Slowly pour hot milk into yolk mixture, whisking constantly.
  11. Return mixture to the saucepan and cook over medium heat until thick.
  12. Remove from heat, stir in butter and vanilla.
  13. Cover with plastic wrap directly on the surface to prevent a skin, and chill until cold.
  14. Cut cooled éclairs in half lengthwise or poke holes in the bottom.
  15. Transfer pastry cream to a piping bag and fill the shells generously.
  16. In a bowl, whisk powdered sugar, milk, and corn syrup until smooth and glossy.
  17. Divide into separate bowls and tint with gel food colors (blue, purple, pink, black).
  18. Drizzle and swirl colors together on the surface of each éclair for a galaxy effect.
  19. Sprinkle with edible glitter, luster dust, and pearls for a cosmic finish.
  20. Dip the tops of éclairs in the glaze and let set slightly.
  21. Arrange on a platter and enjoy the dazzling galaxy glow.
