- 1 cup water
- ½ cup unsalted butter
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups whole milk
- ½ cup granulated sugar
- 4 large egg yolks
- ¼ cup cornstarch
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1 tablespoon light corn syrup or honey
- Gel food coloring (blue, purple, pink, black)
- Edible glitter or luster dust (optional)
- Edible pearls or star sprinkles for decoration
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until a dough forms and pulls away from the pan.
- Transfer dough to a bowl and let cool 5 minutes.
- Beat in eggs one at a time until smooth and glossy.
- Transfer to a piping bag with a large round tip and pipe 4–5 inch strips onto the baking sheet.
- Bake for 15 minutes, then reduce to 350°F (175°C) and bake another 20 minutes until puffed and golden. Cool completely.
- Heat milk in a saucepan until steaming (not boiling).
- In a bowl, whisk sugar, egg yolks, and cornstarch until pale.
- Slowly pour hot milk into yolk mixture, whisking constantly.
- Return mixture to the saucepan and cook over medium heat until thick.
- Remove from heat, stir in butter and vanilla.
- Cover with plastic wrap directly on the surface to prevent a skin, and chill until cold.
- Cut cooled éclairs in half lengthwise or poke holes in the bottom.
- Transfer pastry cream to a piping bag and fill the shells generously.
- In a bowl, whisk powdered sugar, milk, and corn syrup until smooth and glossy.
- Divide into separate bowls and tint with gel food colors (blue, purple, pink, black).
- Drizzle and swirl colors together on the surface of each éclair for a galaxy effect.
- Sprinkle with edible glitter, luster dust, and pearls for a cosmic finish.
- Dip the tops of éclairs in the glaze and let set slightly.
- Arrange on a platter and enjoy the dazzling galaxy glow.
